Fluffy Oreo Pancakes

First off, I would like to apologize for doing this to you. Secondly, you are very welcome. On my days off I like to eat things I shouldn’t be eating. Why? Because its my day off. Leave me alone. Oreos. Pancakes. Fluffy. Three beautiful words. All in one mouth. The Oreos add a different texture and aren’t as sweet as chocolate chips. Trust me, there is no reason to feel guilty about a single mouthful of these glorious pancakes. Not even like… a little bit.

Ingredients

  • 1 egg
  • 1 cup flour
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 1 tablespoon sugar
  • 3 teaspoon baking powder
  • ½ teaspoon salt
  • 6-8 Oreos, crushed

Directions

In a mixing bowl beat egg until it is fluffy. Whisk in the remaining ingredients, minus the Oreos, until the batter is smooth. Fold in the crushed cookies. Set batter aside for 10 minutes. On a griddle or pan, cook pancakes until the top starts to get bubbles (approx 2 minutes) flip and cook the other side.

Drizzle with syrup, add butter, and for goodness sake have some manners and add a glass of milk.
